Gluten-Free Friday: Dark Chocolate Candied-Bacon Bites

Happy Gluten-Free Friday Friends!

First and foremost I have some important news!

I am officially a Registered Dietitian!!

This week I sat for my RD Exam and am happy to say I passed!! Thank you all so, so much for your support and encouragement throughout my journey!! Please excuse my enthusiasm while I plaster my new credentials everywhere :-D

I am dedicating this first official post as a dietitian to my favorite food group: CHOCOLATE! (Yup, it's a food group in my book!)

Chocolate is one food I actually find myself craving! Whether it be hot chocolate, chocolate cupcakes, or just a good piece of dark chocolate.

As I am sure most of you know by now, dark chocolate is good for you, too! Natural cocoa is full of flavonoids and antioxidants that help your body resist and repair damage from free radicals. 

Dark chocolate is very heart healthy as well! (Coincidence that Valentine's Day is during National Heart Month??I think not!)

Of course, you do need to be mindful of the chocolate you buy. Sugar-laden, highly processed chocolate is probably not your best option. And remember, everything in moderation. ;-)

I am always on the lookout for fine, quality chocolate. So at last year's Gluten-Free Allergy-Free Expo when I came across Honey Acre's chocolate display, I was ecstatic!

Honey Acre's Dark Chocolate Truffles contain only 2 ingredients: raw honey and chocolate! Crazy that such a luscious bite of chocolate comes from such simply ingredients!

What I love most about Honey Acre's truffles is that they are made with fresh, raw Wisconsin honey, straight from their own busy bees! 

The Honey Acre's family has been making providing quality honey for over 160 years. And let me tell you, they are darn good at it! They have a whole shop of honey goodies - from pure raw honey to honey mustard!

I have teamed up with my bestie Kayla over at The Ecletic Element to share 4 unique, chocolate-filled recipes using these delicious Honey Acre Truffles!

This week's recipe is an incredible dark chocolate candied-bacon appetizer!

You know they say the way to a man's heart is through his stomach? Well, ladies, the way to seal the deal is with bacon! 

And there's chocolate for you! WIN-WIN!

Just remember all in moderation, my friends! :)

Gluten-Free Dark Chocolate Candied-Bacon Bites
Serves 8 to 10 people

You need:
- Plain gluten free crackers of your choice
- 5 to 8 Honey Acres Dark Chocolate Honey Truffles
- Brown sugar
- Cayenne pepper
- 1 Package of bacon
- Parchment paper

1. Pre-heat oven to 350 degrees.
2. Tear off a sheet of parchment paper to cover the bottom of your baking pan/sheet of choice and proceed to lay out gluten free crackers side by side to cover the surface of your pan/sheet leaving a little bit of room in between each.
3. Open your package of bacon and cut into small chunks. Place each small piece of bacon on an individual cracker.
4. Take your brown sugar and liberally crumble and spread it across all bacon covered crackers.
5. Take a bit of cayenne pepper and SPRINKLE it across the crackers. NOTE: I put sprinkle in capital letters because too much can and will make it too spicy to where the crackers won't be enjoyable.
6. Pop in the oven for 5 to 8 minutes or until brown sugar is melted/candied.
7. Take crackers out of oven and let cool for a little bit.
8. Unwrap and break up truffles into a bowl. Pop into the microwave and microwave for 15 second intervals while stirring. Drizzle melted chocolate over each individual cracker, serve, and enjoy!
