Beet Berry Pancakes [GF]

This post is dedicated to my favorite food group: pancakes!

Didn't know that was a food group? Well in my world, it is!

OK, I promise I am not as crazy as I may sound... I know pancakes are not the healthiest of breakfast options. At least in their natural state.

But THESE are not your average pancakes. Oh no! These are BEET BERRY PANCAKES!

That's right! Think of your average berry pancake, but supercharged with all the nutrients of beets!

We're talking folate, potassium, magnesium, and vitamin C (just to name a few.) Not to mention all those added antioxidants!

And if you're familiar with my AM protein boost post (catch up here), then you'll remember that it is crucial to start your day off with enough protein!

With this recipe, you not only get to enjoy a delicious meal of pancakes, but a meal full of protein and healthy vitamins and minerals! TOTAL WIN - WIN!

Beet Berry Pancakes [High Protein + Gluten-Free]

Servings: 2
Serving Size: 3 4" panckes

You Need:
1 cup quick oats (gluten-free)
1 cup non-fat plain greek yogurt
2 eggs
1 beet, peeled and chopped
1/2 cup of mixed berries (either fresh or frozen)
Pinch of cinnamon and salt

Preheat greased griddle over medium heat.
Blend all ingredients in a blender.
Pour mix onto hot griddle, about a half cup at a time to make 4" pancakes.
Cook on one side for 3-5 minutes, flip and cook other side for additional 3-5 minutes.
Top with light maple syrup or maple agave with a side of fresh fruit!
