Gluten-Free Feature Friday: Super-Charged, Gluten-Free Brunch Recipes




One of the best parts of the weekend is getting to go to brunch! I could eat breakfast foods all day, every day. So any excuse to do this with a nice, mid-morning cocktail?! Sign me up!!

I am also someone who enjoys entertaining. I can't wait until I can get out of this small, dinky apartment with my poor-excuse-for-a kitchen so I can invite friends and family over for dinner parties!

I not only dream of throwing dinner parties, but also the ultimate brunch! Complete with adorable table settings and freshly picked flowers!


So when I was given the chance to try out 3 products from Sari Foods, I immediately thought "BRUNCH!"

What gives these brunch recipes super-charged status are these products from Sari Foods: organic spirulina, organic vitamin C from acerola cherries, and nutritional yeast. All are gluten-free, non-gmo, and vegan!


Here is a run-down of the benefits of using these foods in your recipes!

Spirulina
This powder is made from a blue-green algae that contains a bunch of vitamins and minerals! It contains chlorophyll, B vitamins, beta carotene (Vitamin A), Vitamin E, manganese, copper, zinc, selenium, and GLA (an essential fatty acid.)

Nutritional Yeast
When I first saw nutritional yeast at the supermarket, I had NO clue what it was. I thought it was another type of yeast used for baking... Then one day I found out that it is actually a type of fungus (like a mushroom) ground up that is great for vegan cooking, because it adds that umani, cheesy flavor to your dish! Not only that, but it adds fiber, protein, b vitamins, and magnesium.

Acerola
Sari Food's Vitamin C in derived from organic acerola cherries, rather than synthetically produced like in tablet forms. Getting enough Vitamin C can help your body when you are dealing with stress, prevent against heart disease, and improve the look of your skin!

Now think of combining all of these into a gluten-free, vegan brunch! Brunch just took on a whole new level of awesome, I'd say!

This brunch menu consists of biscuits and gravy, spirulina energy bites, and a strawberry cherry Rosé spritzer! Here are the recipes!

Gluten-Free, Vegan Biscuits and Gravy















For the biscuits:
I'd recommend this vegan recipe by the Minimalist Baker! Or, for just a gluten-free biscuit, check out my coconut flour biscuits from last week's recipe!

For the vegan gravy, you need:
2 tbsp of dairy-free butter (like Earth Balance)
4-5 mushrooms chopped
2 tbsp of corn starch
1 cup of almond milk
1 tbsp of Sari Foods Nutritional Yeast
1/2 tsp pepper
Salt to taste

Directions:
Melt butter in a hot skillet.
Add chopped mushrooms and saute for about 5 minutes.
Stir in corn starch until most of liquid is soaked up.
Add almond milk and stir. Stir in nutritional yeast
Let simmer for about 5 minutes, or until desired thickness. If too thick, add more almond milk.
Add in salt and pepper.
Serve over fresh biscuits.

Spirulina Energy Bites















Time: 15 minutes
Servings: 15 Energy Bites

You Need:
1 cup of dates, pitted
1/4 cup of raw almonds
1/2 cup of sunflower seeds, roasted and salted
2 heaping tbsp of coco powder
1 tbsp of Sari Foods Spirulina
1 tsp chia seeds
2-3 tsp of water dates soaked in

Directions:
Soak dates in hot water for about 5-10 minutes
Add almonds and sunflower seeds to food processor and pulse until chopped.
Pour mixture into separate bowl.
After 5-10 minutes, put soaked dates into food process and chop.
Add in almond/ sunflower seed mixture and remaining ingredients.
Add additional date water if mixture seems dry and won't pack.
Take out about 1 tablespoon of mixture and roll into a ball.
Do this for remaining mixture.
Refrigerate for about an hour or until ready to serve.

Strawberry Cherry Rosé Spritzer


















You Need:
Bottle of rosé wine
Your preference of lemon-lime soda, club soda, or seltzer water
Frozen Strawberries
Sari Foods Acerola Powder

Directions:
In each wine glass, fill half way with soda or seltzer water.
Add 1 tsp of Acerola powder to each and stir until dissolved.
Add 2 frozen strawberries to each wine glass and top off with rosé wine.

So here you have your super-charged brunch! The best part? You don't even have to tell your guests that they are getting TONS of nutrients with their delicious eats!


It is always fun for me to "trick" people into healthier eating! (Although, now friends and family have caught on and start to ask how it's healthier... Game bust!)
