Easy & Healthy Vegan Strawberry Chocolate Chip Ice Cream

Oh yeah! I'm so going there!

Get ready for a vegan ice cream that is about to blow your mind!

I am someone who enjoys ice cream anytime of the year! It could be the dead of winter, below freezing temps, and I will still get a craving for some Coconut Bliss!! (If you haven't discovered this amazing treat than you need to. NOW!)

However, I discovered a recipe where I not only get delicious ice cream, I also get a nutritional snack!! You will definitely want to keep this in your bag of tricks for those hot summer days! Or just when you get that hanker' to get strawberry wasted! (Ha! Movie trivia! What's that from? ;-) )

Here is the recipe for:

Vegan Strawberry Chocolate Chip Ice Cream
Time: 5 minutes
Servings: 1

You Need:
1 frozen banana
4-5 frozen strawberries
1 tbsp Coconut Creamer
1 tsp vanilla
Handful of Enjoy Life Dark Chocolate Chips

Add all ingredients but chocolate chips to a food processor.
Blend until smooth consistency (it may take a while, add more liquid if needed but careful not to add too much!)
Add in a handful of chocolate chips and pulse until combined.
Serve immediately while cold or store in freezer until ready to eat.
When ready to serve, top with whipped cream (below) if you would like and enjoy!

Coconut Whipped Topping (Optional)
Time: 5 minutes
Servings: 4-5

You Need:
1 Canned Coconut Cream (Refrigerated! This is important!)
1 tbsp sugar
1/2 tsp vanilla
Chilled Bowl (Put in freezer for about 5 mins)

Take canned coconut cream out of the refrigerator and flip upside down. (Remember the "cream rises to the top." This is to make it easier to pour out liquid.)
Open can and pour out liquid.
Scoop cream into chilled bowl.
Whip until fluffy.
Add sugar and vanilla. Whip until combined.
Add a dollop on top of ice cream.
Keep leftovers in the fridge. It will keep for a little more than a week.

You can certainly play around with this ice cream recipe as well. If you want if a little sweeter you can add some sugar. If you want it a bit creamer you can add straight up coconut cream (like we used in the whipped topping.) You can also experiment with different flavors! Just make sure you always add a frozen banana (it's the ultimate ice cream secret weapon!)

You can also double or triple the recipe to make a big batch to have on hand. It freezes very well. Just allow a few minutes to thaw at room temp before you dig in (I know, it is SO hard to wait!!)
