Easy, Gluten-Free Garlic Shrimp Pasta



One thing is for sure, I LOVE SHRIMP!! When I was a kid, the best part of your birthday was getting to choose where the family would go for your birthday dinner. You know where I'd always chose? Red Lobster! And you know what I always ordered? Popcorn shrimp (because back then gluten didn't bother me!) Fast forward 15+ years and that shrimp-loving little girl still manifests every now and again. Tonight was one of those times!



Not only do I love shrimp, but I love simple, healthy recipes that I can whip up in a snap (and who doesn't?) This is one of my favorite go-to's on a night like tonight where I am overloaded with grad assignments and don't want to spend the entire night cooking and cleaning... It contains 5 simple ingredients; gluten-free pasta, shrimp, garlic, butter, and basil. You may have read that third ingredient and thought "Whoa, Nelly!! Butter ain't healthy!!" Well, first of all, it's "isn't," not "ain't" (use proper grammar please :) ). Second, I don't use just any butter.

Yup, this little baby is my secret weapon! Earth Balance all-natural, Original Buttery Spread! It is a non-GMO, dairy-free, vegan, gluten-free super butter replacement!! I love that they are Non-GMO Project certified! Also, as someone who tries to heavily limit her dairy intake due to the stomach distress it causes me and personal beliefs about dairy, this is a great alternative to butter!! It is made with an all-natural blend of oils, including palm fruit, canola, soy, and olive. Easy, Gluten-Free Garlic Shrimp Pasta

Estimated Time: 20 minutes
Serving: 2

So convenient!
Ingredients:

1 cup of uncooked brown rice or quinoa pasta (either spaghetti, angel hair, or another of your choice)
6 oz of shrimp (either uncooked or cooked, deveined, tails removed)
3 tbsp of Earth Balance Original Buttery Spread
1 tbsp of garlic
1 cube of frozen, chopped basil (I get mine from Trader Joe's


Steps:
1. Cooked pasta according to directions on the package until al dente 
2. Boil shrimp in water until pink (if already cooked, then reheat how you prefer)
Top bowl: cooked, detailed shrimp
Bottom bowl: melted butter mixture
3. Microwave butter, basil cube, and garlic 30 sec or until melted
4. Stir butter mixture (as shown on right)
5. Once pasta is cooked, drain and put in a serving dish
6. Pour in butter mixture and shrimp into pasta and toss
**Note: feel free to add more shrimp or garlic if you feel this is not enough. It will alter the nutrition facts a bit, but not too drastically

Nutrition Fact Per Serving: 465 calories, 46g Carbs, 19g Total Fat, 15g Unsaturated Fat, 347mg Sodium






Pair this with a fresh side salad and a glass of Cab and you got yourself a delicious, super quick, gluten-free meal!!
