Easy Homemade Pasta Sauce

I don't know about you, but here in good ol' northern Illinois it's just about the time to enjoy an abundance of vegetables from your backyard garden! For me, my tomatoes are already eager to come off the vine. So I decided to use my first batch for a delicious homemade pasta sauce! This recipe is perfect if you have a lot or a little or of you want to serve immediately or store for later! It's quite a simple process too! Here's what you have to do:

First, preheat your oven to 325. Cut your tomatoes in half. Spray a cookie sheet with olive oil and arrange with skin of the tomato facing down. Sprinkle with salt and your preferred spices (I used thyme, oregano, and parsley). Next, bake in the oven for about 2 hours.

After time is up, put baked tomato halves into a food processor and blend. 

You will get a nice thick tomato sauce with spiced already mixed in! You can either transfer this directly to a stove or put in containers to be stored for later. (It freezes very well if you are making it in bulk!)

I've gotten about 12 tomatoes in the last week and am expecting to probably get about 50 more before summer is up. Since pasta is such a simple go-to for dinner, having some delicious, homemade pasta sauce on hand is wonderful! And nothing beats the taste of homemade and homegrown!
